Chunky Monkey Baked Oats

Ingredients
- Cottage cheese, Greek yoghurt, or protein powder
- * If using cottage cheese/ GY I reduce the amount of milk being used as it gives extra moisture
- BASE:
- 3 large ripe bananas mashed
- 300-320g oats
- 200-300ml milk of choice
- 200g cottage cheese/ Greek yoghurt (or 60-80g protein powder
- 2 eggs
- 2 tsp baking powder
- Pinch of salt
- CHUNKY MONKEY VERSION:
- 2 tbsp peanut butter
- 2 tbsp maple syrup
- couple handuls (60g) chocolate chips
- handful (50g) of chopped pecans
- 1/2 tsp cinnamon
- ALMOND BAKED:
- 75g ground almonds
- 1 ts almond (or vanilla) extract
- 1 tsp cinnamon
- Almond filling:
- 30g ground almonds
- 2 tbs honey or maple syrup
- 3 tbs almond butter
- Dash of water or milk
- 1 1/2 tbs flaked almonds, to top
Directions
- 1. Mash the bananas in a large bowl.
- 2. Add oats, milk, cottage cheese, eggs, maple syrup, baking powder cinnamon and salt.
- 3. Stir through the peanut butter and chocolate chips.
- 4. Pour into a dish.
- 5. Bake at 180°C for around 30-35 minutes.
- 6. Cool, slice into 9 portions and store in the fridge or freezer.
