Ingredients

  • Cottage cheese, Greek yoghurt, or protein powder
  • * If using cottage cheese/ GY I reduce the amount of milk being used as it gives extra moisture
  • BASE:
  • 3 large ripe bananas mashed
  • 300-320g oats
  • 200-300ml milk of choice
  • 200g cottage cheese/ Greek yoghurt (or 60-80g protein powder
  • 2 eggs
  • 2 tsp baking powder
  • Pinch of salt
  • CHUNKY MONKEY VERSION:
  • 2 tbsp peanut butter
  • 2 tbsp maple syrup
  • couple handuls (60g) chocolate chips
  • handful (50g) of chopped pecans
  • 1/2 tsp cinnamon
  • ALMOND BAKED:
  • 75g ground almonds
  • 1 ts almond (or vanilla) extract
  • 1 tsp cinnamon
  • Almond filling:
  • 30g ground almonds
  • 2 tbs honey or maple syrup
  • 3 tbs almond butter
  • Dash of water or milk
  • 1 1/2 tbs flaked almonds, to top

Directions

  • 1. Mash the bananas in a large bowl.
  • 2. Add oats, milk, cottage cheese, eggs, maple syrup, baking powder cinnamon and salt.
  • 3. Stir through the peanut butter and chocolate chips.
  • 4. Pour into a dish.
  • 5. Bake at 180°C for around 30-35 minutes.
  • 6. Cool, slice into 9 portions and store in the fridge or freezer.
