Ingredients

  • 1 can of Bush Pinto beans or 2 cup boiled beans with bean water
  • Half a yellow onion, chopped
  • 1-2 jalapeño, chopped
  • 1 garlic clove, minced or ⅛ tsp garlic powder
  • 2 - 3 thick applewood smoked bacon, sliced into pieces
  • ½ cup beef broth
  • ½ Pack of Goya cilantro y achiote
  • ¼ tsp ground cumin
  • ½ tsp Polvo de chili
  • Salt & pepper to taste
  • Dash of Cayenne pepper for heat (optional)
  • Cilantro (optional)

Directions

  • 1. Heat a medium pot on medium- high heat.
  • 2. Add bacon and cook until it starts to get some color. Add the onions and jalapeños and mix to coat in fat. Cook until onions become translucent.
  • Stirring occasionally.
  • 3. Add garlic (if using fresh) and cook for 1 minute. Add all spices and mix to coat.
  • 4. Add can of beans with all juice or boiled beans with bean water and broth, mix to combine. Bring to a boil and cover and simmer on low for 10-15 minutes. Can cook for 20 -25 minutes on low.
  • 5. Stir and taste. Add salt and pepper as needed. Garnish with cilantro or cojita cheese (optional)
