Mexican Cornbread

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1 large egg
  • 1/4 cup melted butter
  • 1/2 cup canned corn kernels
  • 1/4 cup diced jalapeños
  • 1/2 cup shredded cheddar cheese

Directions

  • Preheat the oven to 375°F. Grease a baking dish or cast-iron skillet.
  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, mix buttermilk, egg, and melted butter. Stir into the dry ingredients.
  • Fold in corn kernels, diced jalapeños, and cheddar cheese.
  • Pour the batter into the prepared dish and bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  • Let cool slightly before serving.
