
Mexican Cornbread

Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1 large egg
- 1/4 cup melted butter
- 1/2 cup canned corn kernels
- 1/4 cup diced jalapeños
- 1/2 cup shredded cheddar cheese
Directions
- Preheat the oven to 375°F. Grease a baking dish or cast-iron skillet.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix buttermilk, egg, and melted butter. Stir into the dry ingredients.
- Fold in corn kernels, diced jalapeños, and cheddar cheese.
- Pour the batter into the prepared dish and bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Let cool slightly before serving.
