Ingredients

  • 2 & 1/2 cups liquid egg whites
  • 2 whole eggs
  • 1 & 1/2 tablespoon flour (12g)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 & 1/4 cups low-fat small curd cottage
  • cheese (275g)
  • 2 & 1/2 ounces diced green chiles
  • 1 & 1/4 cups fat-free shredded cheddar
  • cheese (140g)
  • 1 & 1/4 cups shredded mozzarella
  • cheese (140g)

Directions

  • Direct Directions 1. Preheat oven to 350 degrees. Arrange 5 oven safe containers on a cookie sheet and grease lightly with cooking spray.
  • 2. In a large mixing bowl or mixer, beat egg whites and eggs for 2-3 minutes on medium-high speed.
  • 3. In a small bowl, combine flour, baking powder, and salt. Break apart any clumps.
  • Gradually add to egg mixture.
  • 4. Stir in cottage cheese, green chiles, and 2 cups of shredded cheese.
  • 5. Pour into baking dishes. Sprinkle remaining cheese on top.
  • 6. Bake for about 45 minutes, or until the center appears to be cooked through.
