Honey Glazed Carrots

Ingredients
- 12 oz. frozen crinkle cut carrots
- 2 tablespoons butter
- 2 tablespoons honey
- 1 tablespoon dark brown sugar
- salt and pepper to taste
- optional: 1-2 tablespoons chopped flat-leaf parsley
Directions
- In a medium saucepan, bring 1/3 cup water to a boil. Add carrots and gently stir until water returns to a boil. Reduce heat; cover and simmer, 6-8 minutes, or until tender. Drain the carrots and add back to the pan with butter, honey and brown sugar. Cook until a glaze coats the carrots, about 5 minutes. Season with salt and pepper and garnish with parsley if desired.
Notes
- If using 16 oz. crinkle cut carrots, increase the brown sugar by 1/2 tablespoon more.
- You can use freshly sliced carrots or baby carrots. You just might need to increase the amount of water it's cooked in, and increase the time it simmers. Just simmer until tender.
