Jamaican Style Tilapia

Ingredients
- Marinade
- 1 tablespoon of allspice
- 1 teaspoon of thyme
- 2 scallions, finely chopped
- 1-2 Scotch bonnet peppers, finely chopped (adjust to taste
- Juice of 1 lime
- 1 tablespoon of salt
- Black pepper to taste
- Tilapia
- 2-3 tilapia fish (whole or filleted)
- Vegetable oil for frying
- Salt and pepper (to taste)
- Flour (optional, for dusting)
Directions
- In a bowl, combine all the marinade ingredients.
- Rub the marinade all over the tilapia, ensuring it gets into the cuts and inside the cavity if cooking whole.
- Allow the fish to marinate for at least 30 minutes but ideally for 1–2 hours in the refrigerator.
- Heat oil in a large frying pan over medium-high heat.
- Season the marinated tilapia with salt and pepper. If you prefer, lightly dust the fish with flour to create a crispy coating.
- Carefully place the fish in the hot oil. Avoid overcrowding the pan; fry in batches if necessary.
- Fry for about 4–5 minutes on each side, or until golden brown and cooked through.
- Remove from the oil and place on paper towels to absorb excess oil.
