Jamaican Style Tilapia

Ingredients

  • Marinade
  • 1 tablespoon of allspice
  • 1 teaspoon of thyme
  • 2 scallions, finely chopped
  • 1-2 Scotch bonnet peppers, finely chopped (adjust to taste
  • Juice of 1 lime
  • 1 tablespoon of salt
  • Black pepper to taste
  • Tilapia
  • 2-3 tilapia fish (whole or filleted)
  • Vegetable oil for frying
  • Salt and pepper (to taste)
  • Flour (optional, for dusting)

Directions

  • In a bowl, combine all the marinade ingredients.
  • Rub the marinade all over the tilapia, ensuring it gets into the cuts and inside the cavity if cooking whole.
  • Allow the fish to marinate for at least 30 minutes but ideally for 1–2 hours in the refrigerator.
  • Heat oil in a large frying pan over medium-high heat.
  • Season the marinated tilapia with salt and pepper. If you prefer, lightly dust the fish with flour to create a crispy coating.
  • Carefully place the fish in the hot oil. Avoid overcrowding the pan; fry in batches if necessary.
  • Fry for about 4–5 minutes on each side, or until golden brown and cooked through.
  • Remove from the oil and place on paper towels to absorb excess oil.
