Healthy Gingerbread Muffins

Ingredients
- 1½ cups whole wheat flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground cloves
- ½ tsp salt
- 3 Tbsp maple syrup
- 1/4 cup blackstrap molasses
- 1 large egg, at room temperature
- 1 tsp vanilla extract
- 1/3 cup Greek yogurt
- ½ cup milk of choice
- 1/4 cup coconut oil, melted
Directions
- Preheat the oven to 350°F/175°C and line a muffin tin with liners.
- In a large bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.
- In a separate bowl, add the maple syrup, molasses, egg, vanilla extract, yogurt, and milk. Whisk together until smooth and well combined.
- Add the dry ingredients and mix until just combined. Fold in the melted coconut oil.
- Divide the batter evenly into the prepared muffin tin, filling each section about half full.
- Bake for 18-20 minutes, or until a tester comes out clean.
