Ingredients

  • 1½ cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ½ tsp salt
  • 3 Tbsp maple syrup
  • 1/4 cup blackstrap molasses
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1/3 cup Greek yogurt
  • ½ cup milk of choice
  • 1/4 cup coconut oil, melted

Directions

  • Preheat the oven to 350°F/175°C and line a muffin tin with liners.
  • In a large bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.
  • In a separate bowl, add the maple syrup, molasses, egg, vanilla extract, yogurt, and milk. Whisk together until smooth and well combined.
  • Add the dry ingredients and mix until just combined. Fold in the melted coconut oil.
  • Divide the batter evenly into the prepared muffin tin, filling each section about half full.
  • Bake for 18-20 minutes, or until a tester comes out clean.
