Ingredients

  • 2 lbs of Red Beans, rinsed or can soak overnight
  • 2 lbs of Hot Sausage
  • 2 lbs of Andouille Sausage
  • 2 packages of Pork Tasso
  • Holy Trinity Mix (can buy the container or use the following)
  • - 1 yellow onion, diced
  • - 3 stalks of celery, diced
  • - 1 green bell pepper, diced
  • Minced garlic
  • 8 cups of water
  • 1 32oz box of Chicken Stock
  • •Cajun Seasoning
  • •Garlic Powder
  • •Onion Powder
  • •red pepper flakes
  • (Start with a tbsp of each and adjust from there. I always end up adding more but everyone’s taste is different)
  • •3-5 dashes of tabassco sauce
  • •4-6 Fresh Bay Leaves

Directions

  • Need: Large Dutch Oven
  • 1. Add in sausage and tasso. Let cook for 20-30 minutes. Add in onions and garlic. Let cook another 7-10 minutes.
  • 2. Pour rinsed beans on top and add in water and stock. Sprinkle with all seasonings to taste and top with fresh bay leaves. Cover and let cook on medium heat for 4-5 hours. If beans are soaking up too much liquid add in more stock if needed
  • 3. Cook until desired thickness. About 4 hours!
