White Chicken Lasagna

Ingredients
- 2 rotisserie chickens
- 1 pack of no cook lasagna noodles
- Olive Oil
- 1 onion, diced
- 1 carton of sliced Bella mushrooms
- 6oz of baby spinach
- Red pepper flakes
- Dried basil
- Dried oregano
- S&P
- Cajun Seasoning
- Bechmel or white sauce
- 2 bags shredded Mozzerella
- Parmesan
Directions
- Preheat oven to 375
- 1. In saucepan, combine oil, onion, & mushrooms. Add seasonings and let cook till softened about 7-10 minutes. Add in spinach and let cook another 20 seconds til wilted. Remove from heat and add in cooked chicken and stir together. Set aside.
- 2. Either make a bechmel sauce or use jar white sauce
- 3. In a 9x13 lasagna pan layer white sauce, noodles, chicken mix, mozzerella, white sauce. Layer till you get to the top and top with mozerella.
- 4. Bake in oven on 350 for 20-30 minutes just until cheese bubbles and all ingredients are married.
