Ingredients
- 250g Young breadfruit (or jackfruit), marinated overnight
- Wet mixture:
- 2 flax “eggs” (2 tbsp flaxseeds + 6 tbsp water)
- 1 tsp garlic powder
- Pinch of salt
- 3 tbsp all purpose flour
- 2 tbsp water
- ¾ tbsp liquid smoke (optional)
- Dry mixture:
- 3 tbsp all purpose flour
- 2 tsp garlic salt with parsley
- For frying:
- 3 tbsp vegetable oil
Directions
- Marinade the breadfruit with spices and seasonings of your liking.
- Prepare the wet mixture.
- Cut the breadfruit into smaller chunks if you wish.
- Coat the breadfruit chunks with the wet mixture.
- Prepare the fry mixture.
- Coat the breadfruit chunks with the dry mixture.
- Fry and serve with your dip of choice.
Notes
- Young jackfruit can taste sour so squeezing out as much liquid as you can will help it absorb the flavourings.
- Breadfruit, just like jackfruit might take time to absorb flavourings. It is best to marinate overnight with any flavourings of your choice. This recipe was created from leftover breadfruit adobo, which uses soy sauce, vinegar, garlic, bay leaves, and peppercorns as ingredients.
- Replace half of the all purpose flour with rice flour, on both wet and dry mixture for crispier texture. The amount can be adjusted depending on how much breadfruit or jackfruit you’re cooking.
- Measurements can be easily adjusted according to your liking.
