Braised Pork with mushrooms and carrots over mashed potatoes

Ingredients

  • 1 lb Pork Shoulder
  • 3 tbsp salted butter
  • half of 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • ½ cup mushrooms, Sliced
  • 1/2 cup carrot, sliced into rounds
  • 2 tsp Kosher salt
  • ½ tsp Black pepper
  • ⅓ tsp Chili powder
  • ⅓ tsp cumin
  • ⅓ tsp Paprika
  • 1 tsp Thyme
  • 1/2 tbsp. Flour
  • 1/4 cup Merlot
  • 2 cups chicken broth

Directions

  • 1. In a large pot, melt butter. Add mushrooms, carrots, onions and sauté for a couple of mins, until onions are translucent. Add garlic and thyme and cook for an additional minute.
  • 2. Add Pork, and all spices (including salt & pepper)and cook until no longer pink.
  • 3. Add flour and mix to coat. Cook for 1 min. Add wine and cook for 1 min.
  • 4. Add broth and mix to combine. Bring to a boil.
  • Reduce heat and simmer for 1-1 ½ hrs covered.
  • 5. If there is a heavy layer of oil floating, Henry place a paper towel over and quickly remove using a new paper towel each time until enough oil is removed.
  • Spoon over mash potatoes and enjoy.
