Braised Pork with mushrooms and carrots over mashed potatoes

Ingredients
- 1 lb Pork Shoulder
- 3 tbsp salted butter
- half of 1 yellow onion, chopped
- 2 garlic cloves, minced
- ½ cup mushrooms, Sliced
- 1/2 cup carrot, sliced into rounds
- 2 tsp Kosher salt
- ½ tsp Black pepper
- ⅓ tsp Chili powder
- ⅓ tsp cumin
- ⅓ tsp Paprika
- 1 tsp Thyme
- 1/2 tbsp. Flour
- 1/4 cup Merlot
- 2 cups chicken broth
Directions
- 1. In a large pot, melt butter. Add mushrooms, carrots, onions and sauté for a couple of mins, until onions are translucent. Add garlic and thyme and cook for an additional minute.
- 2. Add Pork, and all spices (including salt & pepper)and cook until no longer pink.
- 3. Add flour and mix to coat. Cook for 1 min. Add wine and cook for 1 min.
- 4. Add broth and mix to combine. Bring to a boil.
- Reduce heat and simmer for 1-1 ½ hrs covered.
- 5. If there is a heavy layer of oil floating, Henry place a paper towel over and quickly remove using a new paper towel each time until enough oil is removed.
- Spoon over mash potatoes and enjoy.
