Dreamy Pasta with Lemon Cream Sauce

Ingredients
- 500 g pasta of your choice (((17½ oz)))
- 100 g vegan butter (((3½ oz)))
- 3 garlic cloves (minced)
- 2 lemons (zested)
- 1 tbsp all-purpose flour
- 2 tbsp vegan parmesan
- 1 lemon (juiced)
- 250 ml soy or oat cream (unsweetened ((1 cup)))
- salt and pepper to taste
- 1 handful of parsley (chopped)
Directions
- 1. Bring a large pot of salted water to a boil. Add in pasta and cook until al dente.
- 2. At the same time, in a large saucepan, heat butter over medium to high heat.
- 3. Add in garlic and lemon zest and brown for 1-2 minutes.
- 4. Add in flour and parmesan and stir until combined.
- 5. Stir in lemon juice and cream and stir.
- 6. Adjust salt and pepper and simmer for 2-3 minutes until creamy.
- 7. Stir in the pasta, mix well, top with parsley and serve straight away.
