Ingredients

  • 500 g pasta of your choice (((17½ oz)))
  • 100 g vegan butter (((3½ oz)))
  • 3 garlic cloves (minced)
  • 2 lemons (zested)
  • 1 tbsp all-purpose flour
  • 2 tbsp vegan parmesan
  • 1 lemon (juiced)
  • 250 ml soy or oat cream (unsweetened ((1 cup)))
  • salt and pepper to taste
  • 1 handful of parsley (chopped)

Directions

  • 1. Bring a large pot of salted water to a boil. Add in pasta and cook until al dente.
  • 2. At the same time, in a large saucepan, heat butter over medium to high heat.
  • 3. Add in garlic and lemon zest and brown for 1-2 minutes.
  • 4. Add in flour and parmesan and stir until combined.
  • 5. Stir in lemon juice and cream and stir.
  • 6. Adjust salt and pepper and simmer for 2-3 minutes until creamy.
  • 7. Stir in the pasta, mix well, top with parsley and serve straight away.
