Spiced Chicken and Yams

Ingredients
- 1 whole chicken 4-5 lb
- 1 medium onion, chopped
- 3 medium yams or sweet potatoes, peeled and chopped
- 2 tbsp olive oil
- 3 tsp ground cumin
- 1 tsp cinnamon
- 1/2 tsp black pepper
- 2 tsp sea salt
Directions
- Preheat to 425. Place chicken in a 10x14 in pan. Pat dry. Place some onion in the cavity, then scatter around the dish. Nestle in the yam pieces. Drizzle with oil.
- Mix spices and rub half on the chicken and sprinkle half on the yams, gently toss.
- Roast 25 min, then reduce to 325 and bake 1 hour. Chicken is done w 165 internal temp. Remove chicken and rest on a plate 10 min. Serve slices with yams and pan juices.
Notes
- Serve with collard greens and steamed green beans.
