MCM Mushroom Conserva
Ingredients
- 1 ½# Oyster mushrooms, shiitake or any type will work (tear/cut into same size pieces)
- 2 c olive oil
- ½ c sherry vinegar
- 2 tsp Kosher Salt
- 1 small bunch picked thyme (tied)
- 4-5 pieces of garlic
- 1 bay leaf
- 4-5 pieces of lemon peel
Directions
- 1. Bring the oil to 180 degrees in the oven
- 2. Add salt, lemon peel, bay leaf, thyme, garlic and mushrooms; gently cook for 45 minutes.
- 3. Add sherry vinegar and cook 2-3 more minutes.
- 4. Jar and refrigerate for up to a month or can it for long term storage in the pantry.
- 5. To serve, sprinkle over anything, we make fresh bread and serve over the top. It can be used in so many ways.
