Chicken Piccata

Ingredients
- 3 Chicken Breast, butterfly longwise to make thin
- Egg wash:
- 2 eggs
- 1tbsp milk, wished together
- Breading:
- 1 cup of bread crumbs
- - garlic powder
- - S&P
- - Magic Poultry Seasoning
- Avocado oil
- 1 box Chicken stock
- 6 tsp butter
- 1tbsp flour
- 1 yellow onion, diced
- 3 cloves of garlic, minced
- ⅓ cup capers
- 1 lemon
- ⅓ cup heavy cream
- Parmesan
- Optional: Angel Hair Pasta
Directions
- Needed: 15” cast iron
- 1. Butterfly chicken. Dip in egg wash, then bread crumb mixture (bread crumbs and seasonings). Fry in avocado oil on both sides till golden brown. Set aside
- 2. Remove and access oil. Add in 2 tbsp of butter, onion, and garlic. Let cook down. Add in rest of butter, lemon, chicken broth, flour. Let cook for 5 minutes to thicken. Add in capers and heavy cream. Let come to a boil. Add in noodles if you choose. Let pasta boil till cooked.
- 3. Add back in chicken and cover for 5 minutes.
