Maple tahini veggie and chick pea salad

- - 6 cups mixed greens
- For the Maple Tahini Dressing:
- - 1/4 cup tahini
- -2 tbsp maple syrup
- - 1 tbsp lemon juice
- - 1 tbsp water (adjust for consistency)
- - Salt, to taste

- Directions:
- 1. Preheat oven to 400°F (200°C). Toss chickpeas and vegetables with olive oil, smoked paprika, salt, and pepper. Roast for 20-25 minutes until crispy.
- 2. Arrange mixed greens in a large salad bowl.
- 3. Top with roasted chickpeas and vegetables.
- 4. Whisk together the maple tahini dressing ingredients and drizzle over the salad.
- 5. Toss to combine before serving.
