Maple tahini veggie and chick pea salad

Ingredients

  • Ingredients:
  • - 1 can chickpeas, drained and rinsed
  • - 2 cups mixed vegetables (carrots, zucchini, red onion)
  • -2 tbsp olive oil
  • - 1 tsp smoked paprika
  • - Salt and pepper, to taste
  • - 6 cups mixed greens
  • For the Maple Tahini Dressing:
  • - 1/4 cup tahini
  • -2 tbsp maple syrup
  • - 1 tbsp lemon juice
  • - 1 tbsp water (adjust for consistency)
  • - Salt, to taste

Directions

  • Directions:
  • 1. Preheat oven to 400°F (200°C). Toss chickpeas and vegetables with olive oil, smoked paprika, salt, and pepper. Roast for 20-25 minutes until crispy.
  • 2. Arrange mixed greens in a large salad bowl.
  • 3. Top with roasted chickpeas and vegetables.
  • 4. Whisk together the maple tahini dressing ingredients and drizzle over the salad.
  • 5. Toss to combine before serving.
