Pasta Fagioli Soup

Ingredients
- • 1 lb ground meat (I like to use an Italian mix or 100% grass fed beef)
- • 1 yellow onion, diced
- • 2 medium carrots, diced
- • 1 rib of celery, diced
- • 4 cloves of garlic, minced
- • 28oz can of crushed tomatoes
- • 1 box kettle and fire chicken or beef bone broth
- • S&P to taste
- • Italian seasoning
- • dried basil and thyme
- • 2 packets of sugar
- • 1 can dark red kidney beans, drained
- • 1 can Cannellini beans, drained
- • 1 cup Datalini pasta or Fusilli
Directions
- Need: Dutch Oven
- 1. Sauté onion, carrots, celery, and garlic in olive oil. Let cook down. Add in ground meat, cook till fully brown, 3-5 minutes. If you used a fatty meat make sure to drain the fat.
- 2. Add in everything else other than pasta. Let come to a boil, reduce heat a little and cook 10-15 minutes covered.
- 3. Add in pasta, let cook until pasta is tender. Sprinkle in Parmesan and adjust any seasonings needed. ENJOY 😋
