Ariel’s crispy tofu burrito with her signature spicy mayo

Sandwich/burger, Wrap • Mushroom, Peppers, Tofu

Ingredients

  • 1 block extra firm tofu- grated and squeezed to drain water
  • Paprika, garlic, onion powder, salt , pepper
  • 2-3 TBSP olive oil
  • Flatten on parchment lined baking sheet
  • Cook at 400-425 degrees for 20-30 mins (check for crispness)
  • Mushrooms, sliced
  • Red & yellow pepper, sliced
  • Sautee with olive oil, garlic powder, salt & pepper
  • WW tortilla
  • Add vegan mayo, crispy tofu, sautéed veggies and chopped green onion
  • Fold into pocket
  • Cook in panini press until crispy
  • For dipping sauce:
  • Vegan mayo (4-5TBSP) & vegan sour cream (2-3 TBSP)
  • Juice of half lemon
  • Chilli powder (“Way more than you think you need”)
  • Salt & Pepper
