Ingredients

  • 1 lbs pork (sirloin or tenderloin), sliced
  • 1 medium onion, sliced
  • 2 cups baby bok choy, chopped
  • 2 Roma tomatoes, diced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Sesame seeds and green onions for garnish (optional)

Directions

  • Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.
  • Add pork, cook until browned, about 3-4 minutes. Remove and set aside.
  • In the same pan, add the remaining oil, garlic, onions, and bell pepper. Stir-fry until the vegetables are tender-crisp.
  • Add baby bok choy and Roma tomatoes, stir-fry for another 2-3 minutes.
  • Return the pork to the pan, add soy sauce and oyster sauce (if using). Stir-fry until everything is well combined and heated through.
  • Season with salt and pepper to taste.
  • Garnish with sesame seeds and green onions (if using).
  • Serve hot over rice or noodles.

Notes

  • Use high heat for stir-frying to achieve the perfect texture.
  • Don't overcook the vegetables; they should retain some crunch.
  • Adjust the sauce to your taste by adding more soy sauce or other seasonings.
