CC Pork & Veggie Stir-Fry 10-22-25

Ingredients
- 1 lbs pork (sirloin or tenderloin), sliced
- 1 medium onion, sliced
- 2 cups baby bok choy, chopped
- 2 Roma tomatoes, diced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
- Sesame seeds and green onions for garnish (optional)
Directions
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.
- Add pork, cook until browned, about 3-4 minutes. Remove and set aside.
- In the same pan, add the remaining oil, garlic, onions, and bell pepper. Stir-fry until the vegetables are tender-crisp.
- Add baby bok choy and Roma tomatoes, stir-fry for another 2-3 minutes.
- Return the pork to the pan, add soy sauce and oyster sauce (if using). Stir-fry until everything is well combined and heated through.
- Season with salt and pepper to taste.
- Garnish with sesame seeds and green onions (if using).
- Serve hot over rice or noodles.
Notes
- Use high heat for stir-frying to achieve the perfect texture.
- Don't overcook the vegetables; they should retain some crunch.
- Adjust the sauce to your taste by adding more soy sauce or other seasonings.
