Lazy Noodles

Ingredients
- 1 pound dried spaghetti, fettuccini, or linguine pasta
- 1 pound ground chicken, or turkey
- 1 cup Green onions white parts divided and cooked with meat and green parts added at the end.
- 4 cloves garlic, minced
- 4 large handfuls of baby spinach, roughly chopped
- salt and pepper
- 4 1/2 tablespoons soy sauce
- 4 1/2 tablespoons water
- 3 tablespoons sesame oil
- 3 teaspoons honey
- 2 teaspoons chili oil, Sambal Oelek, or garlic chili paste (optional) to taste
Directions
- Bring a pot of water to a boil for the noodles.
- Meanwhile, In a large measuring cup, mix the soy sauce, water, sesame oil, honey, and chili oil/paste (if using). Add 1/3 of the sauce mixture to the meat mixture in the pan. Set remainder aside.
- Heat skillet on medium high heat, and add the ground meat, and cook and crumble until browned cooked through.
- Add the white part of the green onion, and continue to cook over medium heat until the onions are slightly softened and browned at the edges. add garlic; stir in and cook another 30 seconds. then add 1/3 cup of the sauce to the skillet and stir well. turn heat down to low. keep an eye on it until the burner cools because the sugars in the sauce will burn.
- When Pasta is done, drain, and pour into a medium to large mixing bowl or back into the hot pot you just cooked the pasta in. Stir sauce mixture and pour half of the remaining sauce over pasta and toss. when meat mixture is done, add spinach to pan and toss to heat and wilt. once just about wilted either pour into pasta bowl, or pour pasta back into skillet add remainder of sauce and toss to coat. serve with green onions and allow to heat together for about 10 minutes. you can turn the burner off and allow te residual heat take care of this part. just stir occasionally to redistribute the sauce, as the pasta will soak it up quite quickly.
Notes
- I add one third of the sauce to the meat in the pan, tossed 1/3 sauce with the pasta and then add the remainder to the skillet with the meat and wilted spinach, when I add the pasta. Toss to coat, and serve!
