Mexican Street Corn Pasta Salad

Ingredients
- •16oz pasta of choice, I like a small cut pasta like Ditalini
- •1 bunch green onions
- •1 bunch cilantro, chopped
- •1/2 jalapeno, diced
- •1/2 red onion, diced
- •1 cup Cojita cheese
- •6 ears, fire roasted corn
- Dressing:
- •1/2 cup mayo
- •1/2 cup sour cream
- •2tbsp olive oil
- •1-2 limes, squeezed
- •S&P
- •Badia complete seasoning
- •garlic powder
- •chipotle seasoning
Directions
- 1. Clean and roast corn on BBQ pit or on griddle to get a good char. This is a very important step!!
- 2. Mix cooked pasta and all other ingredients together.
- 3. Combine dressing ingredients, pour on top and and mix all together.
- 4. Put in the fridge for 20 minutes and take out to serve
