Caribbean Beef Curry with Potatoes CC

Ingredients
- 1 lbs beef stew meat, cut into bite-sized cubes
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder preferably Caribbean-style
- 1 teaspoon ground allspice
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 large potato, peeled and diced
- 1 14 oz can diced tomatoes
- 1 cup beef stock
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh cilantro, chopped for garnish
- 1 tablespoon fresh lime juice optional
Directions
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the beef stew meat and brown it on all sides,
- about 5-7 minutes. Remove the beef and set it aside.
- In the same pot, add the chopped onion and cook for 5 minutes until softened.
- Stir in the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
- Add the curry powder, ground allspice, turmeric, cinnamon, cumin, and cayenne pepper (if using). Stir well to coat the onions and garlic with the spices, cooking for another 1-2 minutes.
- Return the browned beef to the pot and stir to combine with the spices.
- Add the diced potatoes, canned tomatoes, beef broth, soy sauce, and brown sugar. Stir to combine and bring to a simmer.
- Cover the pot and let the curry simmer on low heat for 45-50 minutes, or until the beef is tender and the potatoes are cooked through.
- Season with salt and freshly ground black pepper to taste. Stir in fresh lime juice (if using) for a bright finish.
- Serve the Caribbean beef curry over rice, garnished with chopped cilantro.

- If you prefer a thicker curry, mash a few of the potatoes in the pot once they are cooked to your liking. This will create a creamy, rich sauce. Adjust the heat by adding more cayenne pepper or fresh chili if you like it spicier.
