Sourdough Sandwich Bread

Ingredients
- 150 grams of sourdough starter
- 600 grams of room temperature water
- 42 grams of honey
- 900 grams of all purpose flour
- 100 grams of wheat flour
- 20 grams of salt
- 1 stick softened unsalted butter
Directions
- Wisk together Starter, Water and Honey until it's nice and frothy.
- In a stand mixer, using the dough hook attachment, combine all ingredients and mix on low until well incorporated.
- Now mix (kneed) on medium for 8 to 10 minutes.
- Oil a large bowl.
- Place dough in bowl and rest for about 12 hours or until dough has doubled in size.
- Place dough on a floured surface and cut in half.
- Shape into loaves and place in an un-greased metal loaf pan. (Stretch out into a rectangle then fold each side in long ways).
- Cover and let rise for 2 hours.
- Preheat oven to 500 degrees. Then lower to 375 degrees for 35 minutes.
- Butter top of loaves once taken out of oven. Let cool overnight before slicing.
Notes
- You can knead by hand if you do not have a mixer.
- I like to incorporate cinnamon and brown sugar into one of the loaves while folding and placing into the bread pan.
- You can freeze.
