Chicken Squash Soup

Ingredients
- 1 Chicken breast
- ¾ cup yellow squash, diced
- ¾ cup zucchini, diced
- half of one white onion, diced
- 1 garlic clove, minced
- ¼ tsp cumin
- ⅛ tsp black pepper
- ¾ tsp kosher Salt
- 3 cups water
- 1 Chicken bouillon cube
- ½ tsp El yucateco Chile habanero hot sauce
- ½ pack Goya con Cilantro y achiote
- ¾ cup white hominy, drained
- ½ of a lime, juiced
- Garnish -
- corn tortillas
- Cilantro
- Cojita cheese
- Avocado, diced
Directions
- 1. Boil Chicken until done and shred, set aside.
- 2.Heat a pot on medium-high heat with 1 tbsp of oil. Once hot, add squash, zucchini, and onions. Cook until translucent and squash has some color. Season with cumin & pepper and mix to combine. Add garlic and cook for 1 minute.
- 3. Add water and Bouillon cube, mix and bring to a boil. Add Chicken and goya packet , mix to combine. Add hominy, lime juice, salt (taste, adjust salt as needed) and simmer for 10 mins. If you want it spicy add hot sauce.
- 4. Pour into bowls, garnish with avocado, cojita cheese, and cilantro. Corn tortillas are a bonus as well.
