Fish & Lime Soup

Ingredients
- 500g white fish fillets, cut into chunks
- 1 liter fish stock
- 200ml lime juice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh cilantro, chopped
Directions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until fragrant.
- Pour in fish stock and bring to a boil.
- Reduce heat to a simmer, add fish chunks, lime juice, salt, and pepper.
- Cook for 10 minutes or until the fish is cooked through.
- Stir in chopped cilantro before serving
