Darrell’s Hummus Chicken

Ingredients
- 4 chicken breasts
- 3 bell peppers
- 1 red onion
- 1 zucchini
- Balsamic vinegar
- Lemon juice
- Paprika
- Garlic Powder
- Salt & Pepper
- Hummus
Directions
- 1. Slice the onions, peppers and zucchini. Marinate for 15 min in balsamic vinegar, lemon juice and spices.
- 2. Add the above to an oiled casserole dish.
- 3. Top with chicken breasts, salt and pepper, a bit of olive oil, then top with 3 tsp+ of hummus on each (more is better!)
- 4. Seasoning with S+P, paprika and drizzle of balsamic.
- 5. Bake uncovered for 40 min at 425°.
