Salmon Sushi Bake

Ingredients
- 1lb of salmon, skinless, cubed
- ½ bunch of Green Onion
- ½ English cucumber, sliced thin
- ½ Avocado
- Sesame Seeds
- ½ block of cream cheese, softened
- 3 cups of Sushi rice
- Eel Sauce:
- ½ cup Mirin
- ½ cup soy sauce or coconut aminos
- ¼ cup granulated sugar or coconut sugar
- ½ tbsp of corn starch or arrowroot starch
- 1 tbsp water
- Spicy Mayo:
- ½ cup Mayo
- 1 tbsp Sriracha
Directions
- Preheat oven to 400
- 1. Make the eel sauce. Combine all ingredients in sauce pan and cook on medium 5-7 minutes until it starts to thicken. It will thicken more as cooking.
- 2. Place cubed salmon in a bowl with cream cheese and 3tbsp of eel sauce. Mix together.
- 3. Layer pan. Sushi rice, salmon mixture, top with sesame seeds. Bake in oven for 12-15 minutes.
- 4. Top with spicy mayo, rest of eel sauce, cucumber mixture and serve! Can top with avocado as well!!
