Ingredients
- Chicken
- 1½ lbs boneless, skinless chicken breasts or thighs, cut into strips
- Marinade & Sauce
- 1¼ cups fresh orange juice
- 2 tsp orange zest
- ¼ cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 2 tbsp light brown sugar
- 2 tbsp honey
- 3 tbsp grated fresh ginger
- 2 tbsp minced garlic
- 2 tbsp sriracha (adjust to taste)
- 2 tbsp olive oil (divided)
- 1 tbsp cornstarch + 1 tbsp water (for thickening)
- Garnish
- Sliced green onions
- Orange slices (optional)
Directions
- In a bowl, whisk together orange juice, zest, soy sauce, vinegar, sugar, honey, ginger, garlic, sriracha, and 1 tbsp oil.
- Place chicken in a zip-top bag, pour in ⅓ cup marinade, seal, and refrigerate for 1 hour.
- Heat remaining oil in a large skillet or wok over high heat.
- Remove chicken from marinade and discard used marinade.
- Stir-fry chicken in batches for 5–6 minutes until golden and cooked through. Remove and set aside.
- Reduce heat to medium-high. Pour remaining marinade into skillet and bring to a boil.
- Whisk cornstarch with water, add to sauce, and simmer for 1–2 minutes until thickened.
- Return chicken to skillet, toss in glaze until coated.
- Garnish with green onions and serve over rice or quinoa.
