Cheesy Garlic Zucchini Steaks

Ingredients
- 2 large zucchinis, cut lengthwise into thick slices
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- Fresh parsley, chopped, for garnish optional
Directions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Brush the zucchini slices with olive oil on both sides and season with salt, pepper, and Italian seasoning.
- Arrange the zucchini slices on the prepared baking sheet. Bake for 10 minutes until they start to soften.
- While the zucchini is baking, mix the garlic with the mozzarella and Parmesan cheeses in a small bowl.
- Remove the zucchini from the oven and top each slice with the cheese mixture.
- Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
- For a golden finish, broil for 1-2 minutes, watching closely to prevent burning.
- Garnish with fresh parsley before serving
