Cheesy Garlic Zucchini Steaks

Ingredients

  • 2 large zucchinis, cut lengthwise into thick slices
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Fresh parsley, chopped, for garnish optional

Directions

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • Brush the zucchini slices with olive oil on both sides and season with salt, pepper, and Italian seasoning.
  • Arrange the zucchini slices on the prepared baking sheet. Bake for 10 minutes until they start to soften.
  • While the zucchini is baking, mix the garlic with the mozzarella and Parmesan cheeses in a small bowl.
  • Remove the zucchini from the oven and top each slice with the cheese mixture.
  • Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  • For a golden finish, broil for 1-2 minutes, watching closely to prevent burning.
  • Garnish with fresh parsley before serving
