Lime Rice

Ingredients
- 1 C uncooked white or brown rice
- 2 C water
- 1 tbsp vegetable oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp freshly squeezed lime juice
- 1 tsp grated lime zest
- Kosher salt, to taste
- Fresh cilantro, chopped, optional
Directions
- In a medium saucepan, heat the oil over medium heat.
- Add the chopped onion and cook until translucent. Add the minced garlic and cook for 1 minute.
- Add the rice and stir to coat the rice with oil and mix with onion and garlic.
- Add the water and bring to a boil.
- Reduce the heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed.
- Fluff the cooked rice with a fork. Add lime juice, lime zest, and salt. Mix well.
- Garnish with chopped cilantro, if desired.

- Variations
- Mix in cooked chicken, shrimp, or tofu for added protein.
- Add diced jalapeños or red pepper flakes for extra heat.
- Experiment with other fresh herbs like parsley or basil.
