Low Sodium Garlic Mashed Potatoes

Ingredients
- 5 pounds of Yukon Gold potatoes, peeled and rinsed
- 1 1/2 sticks unsalted butter
- 8 oz. Marscapone Cheese, softened
- 1/4 cup of half and half
- 1 tablespoon of heavy cream
- 5 heads of roasted garlic
- 1/2 teaspoon of fresh ground pepper
Directions
- 1. Preheat the oven to 350 degrees.
- 2. Dice the potatoes into even-sized pieces and boil in a pot of water until fork-tender, about 25 to 30 minutes.
- 3. Drain and return to the pan over low heat. Mash potatoes for about 5 minutes.
- 4. Add the butter, mascarpone, half and half, cream, pepper, and roasted garlic. Stir until all ingredients are equally distributed throughout and you have achieved your desired consistency.
- 5. Spread the potatoes into a large baking dish that has been coated with nonstick spray. Dot the top with additional unsalted butter (optional). Bake until heated through, about 30 minutes.
