Ground Turkey Burrito Bowl with Brown Rice

Ingredients

  • 1 lb package Ground Turkey
  • 1 cup Brown Rice
  • 1 16 oz can chopped Tomatoes
  • 1 packet Taco seasoning (I use low sodium)
  • 2 Tbsp Olive oil
  • 2 Peppers sliced (any color)
  • 1 medium sliced Sweet Onion
  • 1 bag frozen Corn
  • 1 can Black Beans
  • 2 Avocados diced
  • 1 cup crumbled Queso Fresco cheese
  • 1/4 chopped fresh Cilantro
  • 1/2 Lime cut into 4 sections

Directions

  • 1. Cook brown rice following package instructions.
  • (Takes approx. 40 mins) Keep covered after so stays hot
  • 2. Brown the ground turkey in 1 Tbsp oil over medium heat till cooked
  • 3. Add taco seasoning to meat and toss to coat
  • 4. Add can of tomatoes to meat mixture and mix till blended, let cook while stirring for 5 minutes-set aside covered
  • 5. Saute onions and peppers in oil in a different pan until cooked, about 10 minutes- set aside and keep covered
  • 6. Drain and rinse the black beans
  • 7. Cook microwave corn per package instructions
  • 8. Reheat meat on low for a few minutes if it’s cooled down
  • 9. To assemble the bowls start with a large scoop of rice in each bowl, then add, in a clockwise pattern, large scoops of meat, peppers/onions, beans, corn, and avocado
  • 10. Divide the cheese into 4 portions and add to the center of the bowl. Sprinkle cilantro over and finish with a piece of lime.

Notes

  • If you aren’t feeding a family of 4 then make the extra into assembled meals in Tupperware containers for a great lunch to bring to work!
