Ground Turkey Burrito Bowl with Brown Rice

Ingredients
- 1 lb package Ground Turkey
- 1 cup Brown Rice
- 1 16 oz can chopped Tomatoes
- 1 packet Taco seasoning (I use low sodium)
- 2 Tbsp Olive oil
- 2 Peppers sliced (any color)
- 1 medium sliced Sweet Onion
- 1 bag frozen Corn
- 1 can Black Beans
- 2 Avocados diced
- 1 cup crumbled Queso Fresco cheese
- 1/4 chopped fresh Cilantro
- 1/2 Lime cut into 4 sections
Directions
- 1. Cook brown rice following package instructions.
- (Takes approx. 40 mins) Keep covered after so stays hot
- 2. Brown the ground turkey in 1 Tbsp oil over medium heat till cooked
- 3. Add taco seasoning to meat and toss to coat
- 4. Add can of tomatoes to meat mixture and mix till blended, let cook while stirring for 5 minutes-set aside covered
- 5. Saute onions and peppers in oil in a different pan until cooked, about 10 minutes- set aside and keep covered
- 6. Drain and rinse the black beans
- 7. Cook microwave corn per package instructions
- 8. Reheat meat on low for a few minutes if it’s cooled down
- 9. To assemble the bowls start with a large scoop of rice in each bowl, then add, in a clockwise pattern, large scoops of meat, peppers/onions, beans, corn, and avocado
- 10. Divide the cheese into 4 portions and add to the center of the bowl. Sprinkle cilantro over and finish with a piece of lime.
Notes
- If you aren’t feeding a family of 4 then make the extra into assembled meals in Tupperware containers for a great lunch to bring to work!
