Dark Chocolate Peppermint Patties

Ingredients
- 3 3/4 cup confectioner’s sugar
- 3 Tbsp softened butter
- 3 tsp peppermint extract
- 1/2 tsp vanilla
- 1/4 cup evaporated milk
- 2 cups dark chocolate chips
- 2 Tbsp shortening
- Sprinkles for decoration
Directions
- 1. Mix first 4 ingredients in a large bowl, once combined add the milk and mix well
- 2. Roll into 1 -2 inch balls place on wax paper lined baking sheet and press with a glass t form 1/4 inch thick discs
- 3. Cover and freeze for at least 30 minutes
- 4. Microwave chocolates and shortening for 30 minute intervals, stirring between each one. Remove from microwave when about a 1/4 cup of the chips are not melted- stir at this point until all the chips are fully melted and smooth
- 5. Place one disk at a time in chocolate, use fork to turn over and then try to shake off excess chocolate before placing back on wax paper to set
- 6. Add sprinkles to each Pattie before chocolate firms up
Notes
- These can keep in a cool place for a couple weeks or the freezer for about a month. Christmas tradition!
