Peanut Butter Snowball Truffles

Ingredients
- 1/2 cup peanut butter (preferably without added sugar)
- 1 cup confectioner’s sugar
- 3 Tbsp softened butter
- 1 lb white chocolate candy coating chopped up (almond bark is really good)
- Pinch of salt (if no salt in peanut butter)
- Sprinkles or chopped peanuts to decorate
Directions
- 1. Combine all ingredients except chocolate in a bowl- easiest to mix with your hands to really incorporate the butter into the mix so no blobs of it
- 2. Put in freezer for 30 mins so it firms up
- 3. Make 24 balls out of the dough about 1 inch in size and place on wax paper lined baking sheet
- 4. Melt chocolate coating in a microwave safe bowl. Start with 1 minute, stir, 30 second intervals until about 2/3 melted (important do not fully melt). Take out and stir till chunks fully melt and it is smooth
- 5. Dip balls into chocolate, remove with fork, and carefully place on wax paper. Drizzle chocolate over for extra decoration and/or add sprinkles or crushed peanuts on top

Notes
- These are very good with creamy or chunky peanut butter. These can also be made with dark or milk chocolate instead of the white if you prefer.
- Keep truffles in an airtight container in a cool place- can be stored for up to 2 weeks, or longer if you freeze them! Christmas tradition!
