Prune/Spice Cake

Ingredients

  • Cake:
  • 2 Cups Self Rising Flour
  • 2 Cups granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 Cup Oil
  • 3 Eggs
  • 2 - 4oz Jars Baby food Prunes or Plums
  • 1 1/2 cup chopped pecans or walnuts,
  • (I toast all my nuts before adding, also I use a half cup of Black Walnuts and one cup pecans for this cake.)
  • Glaze:
  • 1 Cup granulated sugar
  • 1/2 tsp baking soda
  • 1/2 cup whole buttermilk
  • 1 Tbsp. white corn syrup
  • 1 1/2 tsp Pure Vanilla Extract

Directions

  • Preheat oven to 325 degrees
  • Grease and flour bunt or tube pan
  • 1- Mix first 5 ingredients together
  • 2- Mix oil, eggs, and baby food prunes or plums together
  • 3- Mix wet ingredients into dry ingredients until well combined.
  • 4- Fold in chopped nuts
  • 5- Bake at 325 degrees for 1 hour (start checking at 45 minute mark) until toothpick comes out clean
  • 6- Turn out onto cake plate
  • 7- While still warm, poke holes with tines of fork all over cake and pour glaze over it letting glaze soak in.
  • Glaze:
  • Bring mixture to a boil (it will become very foamy),
  • pour over cake while both are sill warm. I place the cake on a rack and continually spoon glaze over cake until it is all used, soaks into and adheres to the cake.
