
Prune/Spice Cake

Ingredients
- Cake:
- 2 Cups Self Rising Flour
- 2 Cups granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 Cup Oil
- 3 Eggs
- 2 - 4oz Jars Baby food Prunes or Plums
- 1 1/2 cup chopped pecans or walnuts,
- (I toast all my nuts before adding, also I use a half cup of Black Walnuts and one cup pecans for this cake.)
- Glaze:
- 1 Cup granulated sugar
- 1/2 tsp baking soda
- 1/2 cup whole buttermilk
- 1 Tbsp. white corn syrup
- 1 1/2 tsp Pure Vanilla Extract
Directions
- Preheat oven to 325 degrees
- Grease and flour bunt or tube pan
- 1- Mix first 5 ingredients together
- 2- Mix oil, eggs, and baby food prunes or plums together
- 3- Mix wet ingredients into dry ingredients until well combined.
- 4- Fold in chopped nuts
- 5- Bake at 325 degrees for 1 hour (start checking at 45 minute mark) until toothpick comes out clean
- 6- Turn out onto cake plate
- 7- While still warm, poke holes with tines of fork all over cake and pour glaze over it letting glaze soak in.
- Glaze:
- Bring mixture to a boil (it will become very foamy),
- pour over cake while both are sill warm. I place the cake on a rack and continually spoon glaze over cake until it is all used, soaks into and adheres to the cake.
