Millet "Corny Chips"

Serving size: 16 large chips
Ingredients
- 1 c. whole Millet
- 2 c. Water
- 1 1/4 tsp. Redmond Real Salt
- 2 TBS. unsalted Butter
Directions
- In a medium pot with lid, add Millet and Water, cover & bring to a boil (4.5 temp) for 11 minutes.
- Reduce temp to 2 and cook 20 minutes more.
- Remove from heat and immediately add to Kitchen Aid, adding Salt & Butter. With paddle, mix on med. speed for 15 minutes, scraping down sides as needed.
- Press dough between sheets of plastic (quart Ziploc bags cut in half, zipper removed) in a tortilla press to flatten. Cut into triangles and place on cookie sheet. (We use silicone mats too.)
- Bake at 350ºF for 10 minutes, flip and bake chips another 10 minutes.
- Enjoy like regular corn chips!
