Millet "Corny Chips"

Breads • | Oven |, Crackers
Serving size: 16 large chips

Ingredients

  • 1 c. whole Millet
  • 2 c. Water
  • 1 1/4 tsp. Redmond Real Salt
  • 2 TBS. unsalted Butter

Directions

  • In a medium pot with lid, add Millet and Water, cover & bring to a boil (4.5 temp) for 11 minutes.
  • Reduce temp to 2 and cook 20 minutes more.
  • Remove from heat and immediately add to Kitchen Aid, adding Salt & Butter. With paddle, mix on med. speed for 15 minutes, scraping down sides as needed.
  • Press dough between sheets of plastic (quart Ziploc bags cut in half, zipper removed) in a tortilla press to flatten. Cut into triangles and place on cookie sheet. (We use silicone mats too.)
  • Bake at 350ºF for 10 minutes, flip and bake chips another 10 minutes.
  • Enjoy like regular corn chips!
