Buikspek met zwoerd
zout. peper
5 spices
sojasaus
gember
appelstroop

Directions

Het spek droogdeppen en goed kruiden.
In een vacuümzak doen en luchtledig trekken. Je kunt ook gedeeltelijk vacumeren door het spek in een ziplock zak te doen en deze tot op 1 cm na te sluiten en dan tot de kleine opening onder water te houden zodat de lucht er uit geperst wordt en dan die ene cm snel te sluiten.
12 uur garen bij 67 graden.
Intussen de "lak" maken. Sojasaus + appelstroop + een stukje gember en een beetje water laten inkoken tot een dunne stroop.
Het spek uit de vacuümzak halen, het vrijgekomen vocht bij de stroop doen en dit opnieuw laten inkoken tot een dunne stroop.
Het vlees in porties verdelen.
Lat de stukken spek in de stroop zachtjes verder garen gedurende 20 minuten en draai regelmatig om.
