Delicious Corn Salad

Ingredients
- 4 cups fresh or frozen corn (thawed if frozen)
- 1 cup cherry tomatoes, halved
- ½ cup red onion, finely chopped
- ½ cup cucumber, diced
- ¼ cup fresh cilantro or parsley, chopped
- ¼ cup feta cheese, optional
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
Directions
- In a large bowl, combine corn, cherry tomatoes, red onion, cucumber, and cilantro (or parsley).
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Sprinkle with feta cheese if using.
- Serve immediately or refrigerate for 30 minutes to enhance flavors.
