Ovenschotel van aardappelpuree met kikkererwten, groenten in kruidige tomatensaus en kaas

Ingredients

  • Aardappelen kruimig
  • volle melk
  • nootmuskaat
  • kikkererwten (blik of glas)
  • tomaten
  • groenten uit je voorraad (ik gebruikte ui, een stukje aubergine, een stukje courgette, rode paprika, wortel, enkele champignons)
  • olijfolie
  • tijm
  • laurier
  • salie
  • rozemarijn
  • zout en peper
  • geraspte kaas

Directions

  • Groenten en tomaten klein snijden en aanfruiten in olie.
  • Kruiden en klein gesneden tomaten toevoegen en onder deksel op zacht vuurtje sudderen tot de tomaten "gesmolten" zijn.
  • Uitgelekte kikkererwten toevoegen en nog 10 minuten zachtjes laten sudderen.
  • Op smaak brengen.
  • Intussen aardappelpuree maken.
  • Oven verwarmen op 180 graden.
  • Ovenschotel invetten en breng op de bodem de helft van de kikkererwtenstoverij aan.
  • Bestrooi licht met geraspte kaas.
  • Daarop de aardappelpuree uitspreiden en daarop weer het laatste deel van de kikkererwten.
  • Snijd een klein bosje salie in reepjes en verdeel dat over de kikkererwtenstoverij.
  • Bestrooi met geraspte kaas en plaats 20 tot 30 minuten in de hete oven.

  • Zo'n ovenschotel is altijd mooi om verschillende soorten groenten in te verwerken.
