Hawaiian Huli Huli Chicken

Ingredients
- For the marinade
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 2 tablespoons grated fresh ginger
- 2 cloves garlic, minced
- 2 tablespoons green onions, chopped
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- For the chicken
- 4-6 boneless, skinless chicken thighs
Directions
- In a blender or food processor, combine soy sauce, brown sugar, ketchup, ginger, garlic, green onions, sesame oil, and black pepper. Blend until smooth.
- Place the chicken thighs in a large ziplock bag or a shallow dish. Pour the marinade over the chicken and massage to coat evenly. Seal the bag or cover the dish. Refrigerate for at least 2 hours or overnight.
- Preheat your grill to medium-high heat or your oven to 400°F (200°C). Remove the chicken from the marinade, letting any excess liquid drip off. Grill the chicken for 5-7 minutes per side or until cooked through. Alternatively, bake for 20-25 minutes or until cooked through.
- While grilling or baking, baste the chicken with the reserved marinade. During the last 5 minutes of cooking, brush the chicken with a glaze made from 2 tablespoons of the marinade mixed with 1 tablespoon of honey.
- Serve the Huli Huli Chicken hot, garnished with chopped green onions and sesame seeds. Traditionally, it's served with steamed rice and macaroni salad.
