Cape Malay Yellow Rice

Ingredients
- 2 cups basmati rice
- 2 Tbsp butter or ghee
- 1 small onion, finely chopped (optional but traditional)
- 1 tsp turmeric
- 1 cinnamon stick
- 2 cardamom pods, lightly crushed (optional)
- ½ cup raisins or sultanas
- 1 Tbsp sugar
- 1 tsp salt
- 3½ cups water
Directions
- 1. Rinse the rice under cold water until the water runs clear.
- 2. In a pot over medium heat, melt the butter or ghee.
- 3. Add onion (if using) and sauté until soft and translucent.
- 4. Stir in turmeric, cinnamon stick, and cardamom pods.
- 5. Add water, salt, sugar, and raisins. Bring to a gentle boil.
- 6. Add the rinsed rice and stir once.
- 7. Reduce heat to low, cover, and simmer 15 minutes
- until liquid is absorbed.
- 8. Remove from heat and let stand, covered, 5 minutes.
- 9. Fluff with a fork. Remove whole spices before serving.
