Cape Malay Yellow Rice

Ingredients

  • 2 cups basmati rice
  • 2 Tbsp butter or ghee
  • 1 small onion, finely chopped (optional but traditional)
  • 1 tsp turmeric
  • 1 cinnamon stick
  • 2 cardamom pods, lightly crushed (optional)
  • ½ cup raisins or sultanas
  • 1 Tbsp sugar
  • 1 tsp salt
  • 3½ cups water

Directions

  • 1. Rinse the rice under cold water until the water runs clear.
  • 2. In a pot over medium heat, melt the butter or ghee.
  • 3. Add onion (if using) and sauté until soft and translucent.
  • 4. Stir in turmeric, cinnamon stick, and cardamom pods.
  • 5. Add water, salt, sugar, and raisins. Bring to a gentle boil.
  • 6. Add the rinsed rice and stir once.
  • 7. Reduce heat to low, cover, and simmer 15 minutes
  • until liquid is absorbed.
  • 8. Remove from heat and let stand, covered, 5 minutes.
  • 9. Fluff with a fork. Remove whole spices before serving.
