Cowboy Coleslaw

Ingredients
- 1/2 C mayonnaise
- 1/2 C sour cream
- 1/4 C lime juice
- 3 Tbsp canned adobo sauce
- 1 Tbsp taco seasoning mix
- 1 tsp ground cumin
- salt and pepper to taste
- 1 16 oz package coleslaw mix
- 1 15 oz can black beans, drained and rinsed
- 1 1/2 C frozen corn thawed and drained
- 1 cup red bell pepper, chopped
- 1/2 cup chopped fresh cilantro
- 1/4 cup jalapeños, finely chopped
- 1/4 cup chopped green onions
Directions
- Whisk together mayonnaise, sour cream, lime juice, pureed chipotle in adobo sauce, taco seasoning, and cumin in a large bowl.
- Add shredded coleslaw mix, black beans, corn kernels, red bell pepper, and jalapeno peppers and stir to combine. Add chopped cilantro and green onions and toss to coat—season with salt and black pepper to taste.
- Cover the bowl with plastic wrap and store in the refrigerator until ready to serve.
