Frittata van witlof met spinazie en spekjes

Ingredients

  • 1 kg witlof
  • 150 gram gerookte spekblokjes
  • 100 gram jonge spinazie
  • 20 gram boter
  • zout, cayennepeper, nootmuskaat
  • 6 eieren
  • 100 gram geraspte pittige kaas
  • enkele eetlepels zelfrijzende bloem + scheutje volle melk
  • Olijfolie
  • Soort brood naar keuze.

Directions

  • Witlof schoonmaken en in grove stukken snijden.
  • Bak witlof samen met de spekblokjes in hete boter en laat het wat kleur krijgen.
  • Roer er op het laatst de spinazie door tot die slinkt.
  • Laat iets afkoelen.
  • Oven verwarmen op 175 graden.
  • Eieren losroeren met melk, bloem, zout, cayennepeper er nootmuskaat.
  • De witlofbereiding door de eieren mengen met de geraspte kaas.
  • Een ovenbestendige koekenpan (geen steel van kunststof of hout) op het vuur goed verhitten met wat olijfolie en hierin de bereiding bakken.
  • Na enkele minuten in de warme oven plaatsen gedurende 20 minuten.
  • Serveer met krokant brood zoals stokbrood of pistolets.

Notes

  • Recept voor frittata van witlof. Frittata is eenvoudig te bereiden en kun je zowel als lunchgerecht en hoofdgerecht bereiden. Best te serveren met een krokante broodsoort.
