Ingredients

  • 2 paket saffran (à 1/2 g)
  • 2 dl strösocker
  • 2 msk rom eller vatten
  • 50 g jäst
  • 175 g rumsvarmt smör
  • 5 dl rumsvarm mjölk (3 %)
  • 1/2 tsk salt
  • 800 g vetemjöl (ca 13 1/2 dl till 1 sats)
  • 1 dl russin
  • mjöl till utbakning
  • 1 ägg till pensling

Directions

  • 1. Stöt ev saffranet i en mortel med 1 tsk av sockret (för 1 sats). Lägg saffranet i rommen eller vattnet och rör om. Låt stå 30 minuter.
  • 2. Skär smöret i tärningar.
  • 3. Smula jästen och blanda med mjölk, smör och vätskan med saffran i en bunke eller en köksmaskin med degkrok.
  • 4. Tillsätt resten av sockret, salt och mjöl. Arbeta degen 15 minuter i maskin eller 20 minuter för hand. Låt den jäsa under bakduk 60 minuter.
  • 5. Lägg russinen i lite vatten ca 30 minuter. Sila sedan av vattnet.
  • 6. Ta upp degen på en sparsamt mjölad arbetsbänk. Knåda den lätt och baka ut till lussebullar, ca 40 stycken enkla eller 20 stycken dubbla (för 1 sats). Tryck i russinen.
  • 7. Lägg bullarna på bakpappersklädda plåtar. Låt jäsa under bakduk ca 30 minuter. 
  • 8. Sätt ugnen på 225°C.
  • 9. Pensla bullarna med uppvispat ägg. Grädda mitt i ugnen 8–10 minuter. Låt svalna på galler under bakduk.
