Ingredients
- 2 lb beef heart, trimmed and cubed
- 2 Tbsp olive oil, coconut oil, butter, or ghee
- 1 large onion, chopped
- 2 carrots + 2 celery stalks, chopped
- 2 potatoes or parsnips, cubed
- 3 cloves garlic, smashed
- 1 cup red wine or bone broth
- 1 tsp each thyme + rosemary
- Salt and pepper
Directions
- Brown heart cubes in oil, set aside.
- Sauté onion, garlic, carrots, and celery.
- Add heart back, stir in wine/broth, herbs, potatoes.
- Simmer gently 2–3 hours until tender.
