Turkey Spaghetti Casserole

Ingredients
- 1 medium onion, chopped
- 1 medium carrot, chopped
- 1 celery rib, chopped
- 1 tablespoon butter
- 2 1/2 cups chicken broth
- 1 (10oz) can cream of chicken and mushroom soup, undiluted
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 1/2 cups cooked turkey, cubed
- 6 ounces spaghetti, Uncooked and broken in 2-inch pieces
- 1/2 cup Colby jack cheese, shredded
- 1/2 block of borsin garlic and herb cheese
- 1/2 teaspoon paprika
Directions
- 1. In a small pan, saute the vegetables in butter. Season with salt, black pepper, and paprika and sauté until tender.
- 2. Add soup, broth, 1/2 borsin cheese, and 1/2 cup Colby jack cheese. Mix to combine.
- 3. In a 2-1/2-qt. baking dish coated with cooking spray, layer the spaghetti, turkey, broth mixture and cheese. Pour remaining broth mixture over top.
- 4. Cover and bake at 350F for 60-70 minutes or until spaghetti is tender, stirring halfway through.
- 5. Uncover; sprinkle with remaining cheese. Bake 5- 10 minutes longer or until cheese is melted.
