Ingredients

  • Voor 12 muffins:
  • 125 gram zachte boter
  • 100 gram suiker
  • 1 mespuntje zout
  • 2 eieren
  • 100 gram kastanjepuree
  • 100 gram zelfrijzend bakmeel
  • 2 sinaasappels
  • 3 eetlepels suiker
  • 35 gram cacao nibs

Directions

  • Van 1 sinaasappel het oranje gedeelte van de schil raspen.
  • De sinaasappels uitpersen en mengen met 3 eetlepels suiker.
  • In de keukenmachine suiker en boter goed mengen tot de suiker helemaal is opgenomen.
  • De eieren één voor één toevoegen en verder goed roeren, mengen tot alles een zalfachtige structuur heeft. Dan de kastanjepuree toevoegen en verder mengen tot alle puree goed is opgenomen.
  • Tenslotte de gezeefde bloem en de cacao nibs door het beslag mengen.
  • Verwarm de oven op 180 graden.
  • Knip bakpapier in 12 vierkante stukken ter grootte van de muffinvormen of gebruik kant en klare cup cakepapiertjes.
  • Vet de muffinvormen lichtjes in en plaats de papiertjes er in.
  • Verdeel het beslag over de 12 muffinvormen.
  • Plaats 25 tot 30 minuten in de oven.
  • Laat intussen sinaasappelsap met suiker zachtjes koken tot siroopdikte.
  • Haal de muffins uit de oven en strijk de bovenzijde goed in met de siroop.
