New Orleans Shrimp & Corn Bisque

Ingredients
- 1 lb shrimp, peeled & deveined
- 1 cup corn kernels fresh or frozen
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 celery stalk, chopped
- 1 bell pepper, chopped
- 4 cups seafood stock or chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp Cajun seasoning
- Salt & black pepper, to taste
- Chopped green onions for garnish
Directions
- In a large pot, melt butter over medium heat.
- Add onion, celery, and bell pepper. Cook until softened, about 5 minutes.
- Stir in garlic and cook 1 more minute until fragrant.
- Stir in Cajun seasoning, salt, and pepper.
- Add the seafood stock and corn, then bring to a simmer.
- Stir in heavy cream and let the bisque simmer gently for 10 minutes to thicken slightly.
- Add shrimp to the pot and simmer for 3–4 minutes, until pink and cooked through.
- Taste and adjust seasoning.
- Ladle bisque into bowls and garnish with chopped green onions.
