New Orleans Shrimp & Corn Bisque

Ingredients

  • 1 lb shrimp, peeled & deveined
  • 1 cup corn kernels fresh or frozen
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 celery stalk, chopped
  • 1 bell pepper, chopped
  • 4 cups seafood stock or chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tsp Cajun seasoning
  • Salt & black pepper, to taste
  • Chopped green onions for garnish

Directions

  • In a large pot, melt butter over medium heat.
  • Add onion, celery, and bell pepper. Cook until softened, about 5 minutes.
  • Stir in garlic and cook 1 more minute until fragrant.
  • Stir in Cajun seasoning, salt, and pepper.
  • Add the seafood stock and corn, then bring to a simmer.
  • Stir in heavy cream and let the bisque simmer gently for 10 minutes to thicken slightly.
  • Add shrimp to the pot and simmer for 3–4 minutes, until pink and cooked through.
  • Taste and adjust seasoning.
  • Ladle bisque into bowls and garnish with chopped green onions.
