One Pot Chicken Parmesan Spaghetti Squash Boats

Ingredients
- 1 Spaghetti Squash
- 2 Chicken Breast
- Mozzarella Cheese
- Parmesan Cheese
- 1 24oz RAOs Marinara
- Avocado oil or EVOO
- Parsley
- Seasonings:
- - Italian Seasoning
- - Garlic Powder
- - Salt & Pepper
- - Worcestershire Sauce
- - Fresh Basil
Directions
- 1. Soften spaghetti squash by microwaving for 5-8 minutes. Once soft enough cut in half lengthwise and scoop out middle and seeds.
- 2. Drizzle with Avocado Oil or EVOO and S&P. Turn upside down on pan with grate. Cook on 350 for 25-30 minutes.
- 3. In a bowl, dice up chicken into small subes. Add S&P, mozzarella cheese, 3/4 jar of RAOs, Italian Seasoning, garlic pwder, and a few dashes of Worcestershire sauce. Mix all together.
- 4. When squash is done. Remove from oven, turn over and start to shred the inside. Add in chicken mix on top. Put back into oven for another 30 minutes until chicken is done.
- 5. Add more mozzarella and parmesan on top and cook a few more minutes until melted. Remove and sprinkle with Parsley when ready to serve!
