Jambalaya Soup

Ingredients
- ¼ Lb andouille sausage
- ½ lb Cooked chicken
- 1 cup instant brown rice (or cooked regular rice)
- 1 14-oz can diced tomatoes
- 1 14-oz can red beans or cowpeas
- 12oz frozen cauliflower rice
- 4 cup chicken stock
- 1 tsp creole seasoning
- ¾ cup Dehydrated zucchini or 2 c fresh
- 1 small diced onion or 1/2 cup scallions
- Opt: 12 Oz frozen okra
Directions
- Bring all ingredients to a boil and simmer 10-15 mins until rice is done.
