Jambalaya Soup

Ingredients

  • ¼ Lb andouille sausage
  • ½ lb Cooked chicken
  • 1 cup instant brown rice (or cooked regular rice)
  • 1 14-oz can diced tomatoes
  • 1 14-oz can red beans or cowpeas
  • 12oz frozen cauliflower rice
  • 4 cup chicken stock
  • 1 tsp creole seasoning
  • ¾ cup Dehydrated zucchini or 2 c fresh
  • 1 small diced onion or 1/2 cup scallions
  • Opt: 12 Oz frozen okra

Directions

  • Bring all ingredients to a boil and simmer 10-15 mins until rice is done.
